Sunday, May 7th – Luca, you remember, the 3 year old Thomas The Train little boy, is very “gourmand”. He wanted to celebrate his birthday with his kinder garten friends too. And because mom’s friends really liked the carrot cake which came with Thomas The Train cake 10 days ago, he wanted mini versions of that.

You can find the recipe in the category Quick & Easy. I baked a big round cake, and then cutted the little versions with a small cookie cutter. Try to do the topping last minute, or at least the same day for a fresher result. The cake is better the next day.
