Sunday, 26th September – Banana Bread is a first for me. My work colleague and dear friend Christina has the best recipe I have tasted so far. Maybe one day she will share her secrets… In the meantine, I found this one which is quite a successful try.
INGREDIENTS
- 170 g dark or milk chocolate
- 3 bananas not mature
- 100g butter
- 80g sugar
- 4 eggs
- 120g all puprose flour
- 13g baking powder
- 1 tsp vanilla extract
PREPARATION
Material: Bread knife, pan, large bowl, wooden spoon, baking paper, plate
- Preheat the oven at 180°C.
- Peal and cut the bananes in small cubes. Cut the chocolate in chips with a bread knife. Grease the baking pan.
- Melt the butter in a pan. Once melted, transfer it into a bowl and add the sugar, the eggs and stir well. Add the flour. Do not fear the lumps at the beginning, they will quickly disappear. Stir in the baking powder and the vanilla extract. Stir well until you get a smooth preparation. Add the banana cubes and half of the chocolate chips.
- Pour the preparation in the baking pan and sprinkle the top with the rest of the chocolate chips.
- Bake for 40 minutes. After 20 minutes add some baking paper on the top to avoid the cake to colour too much.
- Let the banana bread cool in the baking pan for 10 minutes then remove it and let it finish cool on a plate or wooden plank.
